- 2 (15 oz.) cans Sliced Potatoes, drained
- 1 (14.5 oz.) can French Style Green Beans, drained and rinsed
- 0.33 cup nicoise or black olives, roughly chopped
- 1 tbsp. cider vinegar
- 1 tbsp. lemon juice
- 1 tbsp. olive oil
- 1 tbsp. Dijon mustard
- 0.25 tbsp. salt
- 2 tbsp. fresh parsley, chopped
- 1 clove garlic, minced
- pepper to taste
Gently combine potatoes, beans and olives in a serving bowl.
Combine vinegar, lemon juice, olive oil, mustard and salt in a small bowl; stir with a whisk. Stir in parsley and garlic; season to taste with black pepper. Pour over potato mixture and toss to combine. Serve immediately or store in refrigerator until serving.
